Viili Yogurt Start

Yogurt that you don’t have to cook, and is easier to make than kefir? Just add your viili start to a glass jar, pour milk over it, and set it in your pantry for 12-24 hours until it is yogurt consistency. Your start will last for years, or even generations if it’s well cared for.

Viili is an ancient yogurt from Finland that has been used for hundreds (if not thousands) of years. It contains around 50 different probiotic strains that are beneficial to gut health. These beneficial organisms help us break down the food we eat and make it more bioavailable.

Viili also pre-digests milk proteins and breaks down lactose, making them much easier to be digested. There have been many studies done on viili and other REAL yogurt (by “real” I mean homemade and cultured from natural probiotic starts, rather than artificially made, with sugars or artificial sweeteners added). Here is a list of studies you can look up if you enjoy that sort of thing.
